Directions
- Combine tuna, mayo, veggies, seasoning, and lemon juice in a bowl.
- Mix well, then add salt and pepper to taste. Set aside.
- Lightly toast your Carbonaut bread for 2-3 minutes.
- Remove from toaster and arrange on baking sheet.
- Top each slice with avocado, tuna salad, and half a slice of cheese.
- Broil in oven on high for 2-3 minutes.
- Remove from oven, and sprinkle with radicchio.
- Dash with hot sauce (if desired) and consume immediately!
Tips
Double the tuna salad recipe if you want a more filling meal.
If you’re melting over your melt, have another.
If making for a kid (even a grown-up one), use a star shaped cookie cutter to literally make a star tuna melt.
Store any extra vegan tuna salad in the refrigerator in an airtight container for up to 4 days—if it lasts that long.
