A hearty, savoury twist on a holiday favourite—this stuffing is rich with caramelized onions, fresh herbs, and nutrient-dense kale, all bound together with the toasty bite of Carbonaut bread. It’s comforting without being heavy, making it perfect as a festive side that steals the show—or even as a stand-alone cozy dinner with a simple salad.
Ingredients

Directions
- Preheat oven to 325°F (165°C).
- Cut Carbonaut bread into 1-inch cubes, spread on a baking sheet, and toast 10–15 minutes until lightly crisp.
- Heat 2 tbsp olive oil in a skillet over medium-low heat.
- Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown (20–25 minutes). Add a splash of water if they start to stick.
- Push onions to the side of the pan. Add 1 tbsp olive oil, garlic, and chopped kale. Sauté 3–4 minutes until kale wilts. Stir everything together.
- In a large bowl, combine toasted bread cubes, onion-kale mixture, nutritional yeast, thyme, sage, salt, and pepper.
- Pour in vegetable broth gradually while tossing until bread is moistened but not soggy.
- Transfer to a greased 9x13-inch baking dish.
- Cover with foil and bake at 350°F (175°C) for 20 minutes. Remove foil and bake another 10–15 minutes until top is golden and crisp.
