Simply cube up toasted Carbonaut Seeded Herb & Garlic Bagels and toss with veggies, olives, cheese, herbs, toasted pine nuts, and dressing.

Ingredients

  • For the dressing (homemade option)

Directions

  1. Clean and chop all vegetables and herbs and place in large bowl.
  2. Toast bagels and roughly chop into 1"cubes.
  3. In a small dry skillet over medium heat, toast pine nuts for 2-3 minutes, stirring frequently until golden and fragrant. Remove from heat and set aside.
  4. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, and a pinch of salt and pepper to create the dressing.
  5. Add chopped bagel cubes, olives, crumbled cheese, and nuts to bowl of veggies.
  6. Pour dressing over mixture and toss. Serve immediately.

Tips:
• If making ahead, do not add bagels until ready to serve.
• For extra crunch, toast bagel cubes in the oven at 350°F for 5-7 minutes after toasting to fully crisp them, preventing sogginess when tossed.
