- Preheat oven to 400F. Line 2 baking sheets with parchment paper. Arrange oven racks to the middle of the oven.
- Whisk Carbonaut baking mix, sugar replacer, baking powder, and salt together in large bowl.
- Cut the cold cubed butter into the dry mixture using a pastry cutter or fork until the pieces of butter are pea sized. Fold in the chopped chives and shredded cheese.
- In another bowl, whisk together buttermilk and egg. Add to the baking mix/butter mixture and gently fold with a spatula until the dough just starts to come together.
- Knead the mixture until the dough is just combined.
- Divide dough equally into 3 and shape into 1-inch-tall disks. Quarter each disk into 4 pieces. Arrange 6 pieces per pan.
- Bake for 11-15 minutes, rotating sheets halfway through bake time, or until lightly golden. Let cool slightly, best served warm.
