Creamy spiced pumpkin filling meets a crunchy granola-pecan topping for a dessert that’s both wholesome and indulgent. Best of all, it’s vegan, number conscious, and ready in under 40 minutes.

Directions
- Preheat oven to 350°F (175°C).
- In a bowl, combine pumpkin purée, sweetener, spices, vanilla, and almond milk. Stir until smooth.
- Divide mixture evenly into 6 greased ramekins (about ½ cup filling each).
- In a separate bowl, combine Carbonaut granola, chopped pecans, and melted coconut oil. Toss to coat.
- Sprinkle topping evenly over each ramekin.
- Place ramekins on a baking sheet and bake for 20–25 minutes, until filling is set and topping is golden and crisp.
- Cool slightly before serving. Enjoy warm with coconut whipped cream or sugar-free vegan ice cream.
These are best enjoyed warm straight from the ramekin, but they also reheat beautifully for make-ahead holiday desserts.
